Metabisulfite is a chemical compound A chemical compound is a pure chemical substance consisting of two or more different chemical elements that can be separated into simpler substances by chemical reactions. Chemical compounds have a unique and defined chemical structure; they consist of a fixed ratio of atoms that are held together in a defined spatial arrangement by chemical bonds consisting of a metal and the bisulfite anion An ion is an atom or molecule in which the total number of electrons is not equal to the total number of protons, giving it a net positive or negative electrical charge. An anion , from the Greek word ἀνω (anο), meaning "up", is an ion with more electrons than protons, giving it a net negative charge (since electrons are negatively (S2O5), usually in the form of sodium metabisulfite Sodium metabisulfite or sodium pyrosulfite is an inorganic compound of chemical formula Na2S2O5. The name is sometimes referred to as disodium (metabisulfite, etc). It is used as a disinfectant, antioxidant and preservative agent and potassium metabisulfite Potassium metabisulfite, K2S2O5, is a white crystalline powder with a pungent sulfur odour. The main use for the chemical is as an antioxidant or chemical sterilant. It is a sulfite and is chemically very similar to sodium metabisulfite, with which it is sometimes used interchangeably. Potassium metabisulfite is generally preferred out of the two. Commonly used as a preservative A preservative is a naturally occurring or synthetic substance that is added to products such as foods, pharmaceuticals, paints, biological samples, wood, etc. to prevent decomposition by microbial growth or by undesirable chemical changes additive in foods, metabisulfite compounds have been demonstrated to cause asthma Asthma is a common chronic inflammatory disease of the airways characterized by variable and recurring symptoms, airflow obstruction, and bronchospasm. Symptoms include wheezing, coughing, chest tightness, and shortness of breath, anaphylaxis Anaphylaxis is an acute multi-system severe type I hypersensitivity reaction. The term comes from the Greek words ανα ana and φύλαξις phylaxis (protection) and other allergic reactions in sensitive individuals.[1]
